Preserve salted foods

Microorganisms are unable to survive in salty environments due to the hypertonic nature of the salt: any living cell would face death (or deactivation if the organism had this defense mechanism) due to dehydration due to the osmosis process.

In the 19th century, nitrites were added to the salt for food preservation (saltpetre), this compound not only preserves the meat but also preserves the red color. This is a strategy used by the food industry to make food appear fresh even after days, avoiding bacterial decay.

How to preserve salted foods
