The matchaormacchais finely crafted Japanese green tea. It is produced starting from the leaves of green tea deprived of the finlamentous parts and finally reduced to dust. ThereJapanese tea ceremonyfocuses on the preparation of thematcha (抹茶 pronounced mat.tɕa).

How is matcha made?

The preparation of thematchastarts several days before the tea harvest and can last up to several weeks.

Before harvest, the tea plants literally comeblanketsto avoid exposure to direct sunlight. With this maneuver, tea growers slow down the vegetative development by stimulating the increase of chlorophyll levels: this is how the leaves take on a particular shade of green, more intense and darker. This strategy, among other things, increases the production of amino acids, in particular of theanine. The shading period can last from one to three weeks, it is a total shading made with a three-layer coating with dark mesh that can block 90% of the sunlight.

Only the shoots ofyouthe most tender are hand-picked for the preparation ofmatchaand gyokuro. The tea leaves and the coarser stems are harvested with agricultural machines and destined for the production of tea infusions in bags.

The guokuro and the matcha are the forms of green tea more valuable. In Japan it is customary to accompany fine green tea with the termumami, which literally meansgood taste. It is the shading that allows green tea to take on a more delicate flavor while the fresh and tender buds are complicit in the sweetness.

On the market there are two types ofmatcha, one for culinary use and the other for the preparation of traditional Japanese tea. There are no standards that differentiate the two types ofmatcha, it is the producers themselves who discriminate against them and label them "culinary use "or for the ritual ofyou.

In the most careful artisanal preparations, it takes up to an hour to grind the tea sprouts to produce only 30 grams ofmatcha.

The price of thematchait depends on its quality and its preparation. Matcha is considered the most valuable when:

  • Ke leaves
    The green tea macchait is prepared with tender and elastic leaves. Not only must the leaves be young but they must be harvested from the top of the tea plant. Overly developed leaves give back a matcha with an almost sandy texture while a fine matcha is fine and light.
  • Drying
    The tender leaves of green teafor the preparation of thematchathey must be dried in the shade and never exposed to direct sunlight.
  • Grinds
    Without the right equipment and technique, thematchacan give rise to degraded dust. Even today, in Japan, thematchait is stone ground and thus reduced to a very fine powder. There is no shortage of granite stone millstones specially designed for the reduction of precious leaves of green tea.
  • Degree of oxidation
    Thematchait must have a bright green color. If the final result takes on a colordull brown or green, the degree of oxidation is excessive and the properties of the matcha obtained are not at all appreciable.

Properties of Matcha

The matcha it contains catechins, carotene and vitamins A, B, C and E.
