Vegetable meatballs



The vegetable meatballs they represent a tasty vegetarian alternative to the more famous meatballs. Let's see in detail how to do the vegetable meatballs following our recipe step by step.

Vegetable balls, the ingredients

  • 3 medium potatoes
  • 2 carrots
  • 1 leek
  • 2 courgettes
  • 1 bell pepper
  • 2 organic eggs
  • 100 grams of Parmesan cheese
  • 2 tablespoons of chopped parsley
  • A handful of pine nuts
  • A handful of raisins
  • Salt and pepper as required
  • 1 egg white and the breadcrumbs for the breading

Vegetable balls, the preparation

  1. Peel the potatoes and put them to boil in salted water without peeling them for about 40 minutes
  2. After the time has elapsed, immediately remove the peel taking advantage of the fact that they are hot then mash them with a vegetable mill
  3. Once this is done, put them in a large bowl
  4. Clean the remaining vegetables, cut them into cubes and put them to cook in a non-stick pan with a drizzle of oil and a glass of water, taking care to turn them often with a wooden spoon
  5. Add the cooked vegetables to the bowl with the mashed potatoes, taking care to drain the residual liquid
  6. Add the grated cheese, chopped parsley, eggs, pine nuts, raisins, pepper and salt
  7. Once this is done, mix all the ingredients well until you get a homogeneous "dough": if it is too sticky or excessively soft, add some breadcrumbs until you have reached the desired consistency
  8. Create the vegetable meatballs with your hands then pass them in the egg white that you have previously beaten in a bowl aside
  9. Roll the vegetable balls in the breadcrumbs
  10. Lightly grease a baking dish or baking tray and place the vegetable meatballs
  11. Bake in the oven at 180 °, cooking them for about 40 ', until you see them golden on the surface
  12. Serve the vegetable meatballs still hot

Variants: if you want, you can add mozzarella cubes to the dough.
