Portulaca Recipe - ingredients for purslane soup
- 200 grams of purslane leaves
- 4 anchovies
- a pinch of salt
- extra virgin olive oil
- 1 tablespoon of white vinegar
- 1 slightly hot pepper
- Wash the purslane very well and cook it in a little water.
- Drain the purslane well and leave itto dry
- Clean the anchovies by removing the bones.
- In a mixer, add the anchovies andpurslane. At low speed, blend everything by adding the extra virgin olive oil and vinegar.
- To flavor, add a pinch of salt.
- If you like strong flavors, add a slightly hot pepper to the mixer.
Chilli can be substituted for green, black or pink pepper, depending on your taste buds. You can add a grating of nutmeg or five grams of ginger.
The portulaca sauce, thus prepared, can be kept in the fridge for 3 or 4 days if well covered with oil. It is an excellent ingredient to dress salads or, as mentioned before, to give a second life to bread that is no longer fresh.
