Pour the egg yolks into a saucepan and add a pinch of salt:
Operate the whisk at low speed to whip the yolks
Mix for about two minutes, until the egg yolks become clear and the mixture is well blended
Increase the speed of the whips by one click and gradually start adding the oil, starting with the extra virgin olive oil
Pour a few drops of lemon, increasing the speed a little more and continue pouring the two types of oil slowly until the sauce absorbs more
Season with salt and add a grind of pepper to taste, then add the remaining lemon juice and taste
Transfer the freshly made mayonnaise into an airtight glass container
Serve immediately or refrigerate
ATTENTION: to prevent the mayonnaise from going crazy, at the end of preparation add two tablespoons of hot water (one for each yolk) before putting it in the refrigerator.
Useful hints: make sure there are no lumps in the mixture, in this sense the mayonnaise is crazy. To remedy this by placing an egg yolk in a bowl then blend again adding a drizzle of oil. Gradually add a spoonful at a time and very slowly, the mad mayonnaise.
