Not alone, it is not necessary, because there is an entire book dedicated to food waste. First of all to analyze the agri-food chain but above all to take action, in a targeted way, aware of the consequences of food waste. After these hundred pages, you can get an idea of ​​the waste and the economic, environmental, nutritional and social consequences generated by the management of surpluses. They are not incurable optimists and pursuers of utopias, to say it, but the two curators who both work daily on the food waste at the Faculty of Agriculture of the University of Bologna. Andrea Segrè is full professor of International and Comparative Agricultural Policy, Luca Falasconi is researcher and professor of Agricultural Policy and Rural Development in the same Faculty, together they founded Last Minute Market.

In their book they plumb the problem of food waste starting from what happens in the European context, then going to look at the logic of the market, the environmental impact. In order to change the numbers of the food waste in our country it is then necessary to study the causes and follow the food chain step by step to see where and how to act.
