Blueberry muffins, classic and vegan recipe

Ingredients

  • 250 grams of soft wheat flour
  • 120 grams of sugar
  • 1 teaspoon of baking powder
  • ½ teaspoon of baking soda
  • A pinch of salt
  • 150 grams of fresh blueberries
  • 160 grams of plain yogurt or buttermilk
  • 1 tablespoon of lemon juice
  • 1 large egg, lightly beaten
  • 2 tablespoons of butter at room temperature

Preparation

  1. Pour the flour into a large bowl then gradually add the sugar, baking soda, yeast, salt and mix the ingredients well with your hands
  2. Add the blueberries and 2 teaspoons of lemon zest
  3. In a separate bowl, mix the butter, yogurt and egg with a whisk
  4. Add the mixture to the flour bowl and mix with a spoon until a homogeneous mixture is obtained
  5. Pour everything into 12 greased and floured muffin tins.
  6. Bake at 190 degrees for about 20 minutes in a preheated oven, or until golden brown.

Ingredients

  • 150 grams of soft wheat flour
  • 150 grams of wholemeal flour
  • 190 grams of soy milk
  • 3 tablespoons of vegetable butter
  • 3 tablespoons of rice flour
  • 1 tablespoon of grated lemon zest
  • 1 tablespoon of lemon juice
  • 150 grams of sugar
  • 1 and a half teaspoons of baking powder
  • ½ teaspoon of baking soda
  • ¼ teaspoon of salt
  • 190 grams of fresh blueberries

Preparation

  1. Pour the soft wheat flour and wholemeal flour into a large bowl and mix them with the sugar, baking soda, baking powder and salt.
  2. Add the blueberries and 2 teaspoons of lemon zest
  3. In a separate bowl, mix the soy milk with the vegetable butter and rice flour
  4. Add the liquid mixture to the bowl containing the sugar, flour and other ingredients
  5. Pour everything into 12 muffin molds, after having greased them with vegetable butter and floured them
  6. Bake at 190 degrees for 20 minutes in a preheated oven, or in any case until golden brown.
